Did you try our recipe for making dalgona coffee? Inspired by the internet famous drink, we made a no-churn ice cream version of it with only five ingredients! It’s creamy and rich with a caffeine kick.
To make six small popsicles you will need:
- 3 tbsp condensed milk
- 2 cups heavy cream (minimum fat content of 36%)
- 2 tbsp instant coffee
- 2 tbsp granulated sugar
- 2 tbsp hot water
- 6 popsicle moulds or 6 small paper cup and ice cream sticks
Being in the thick of the circuit breaker, we know not everyone is gonna go out for popsicle moulds, and not all of us may have them at home. Fret not because you can replace them using paper cups and ice cream sticks instead!
- In a bowl, whip heavy cream until medium peaks form (it should curve like a bird’s beak when you turn the whisk upside down).
- Gently fold condensed milk into heavy cream with a spatula.
- In a separate bowl, combine instant coffee, sugar and hot water. Whip the mixture until it turns pale, fluffy and very thick.
- Fold in 3 tbsp of the heavy cream base into the whipped coffee to help it freeze firmer.Spoon whipped coffee and heavy cream base into popsicle moulds or paper cups. Be creative! You can have two distinct layers like the beverage, or make marbled ice cream by alternating cream and coffee layers.
- If using paper cups, cover them tightly with foil and make a slit in the middle for your ice cream sticks to go through.
- Freeze for eight hours. Enjoy!
