It’s almost that time of the year again! While restaurants are open for CNY bookings, we still won’t be allowed to exclaim our prosperous wishes out loud during our annual lo hei. Whether you’re having your reunion dinner at home again this year or dining out, what we’re here to talk about is the quintessential yusheng. Every year, many restaurants and chefs dish out their own unique rendition of the dish, and this year is no exception. 1. Min Jiang at Dempsey
Min Jiang’s new Trio of Prosperity Blessings ‘Lo Hei’ (S$238) embodies the season with lobster, abalone and raw salmon, adorned with a beautifully hand-illustrated tiger by Master Chef Chan Hwan Kee. It features fresh julienned vegetables like affilla cress, yellow frisee, romaine lettuce, carrots, radish, and accompaniments like fried yam strips, pine nuts, peanuts, crackers. Garnished with gold flakes and edible flowers, complete the dish with a dressing of plum sauce, strawberry sauce, calamansi juice, lemongrass, ginger flower and chilli padi.

2. Yi by Jereme Leung
Chef Jereme Leung presents a variety of yusheng platters that you can toss to good luck and health. The Fortune Yusheng (S$168) comes with salmon sashimi and crispy silver bait fish, while the Longevity rendition (S$198) is served with Arctic shellfish and Japanese sweet shrimps. Wanna go big or go home? Then get the Prosperity Yusheng (S$208) with tuna sashimi, Spanish Iberico ham and honey melon. There’s even a vegetarian variation (S$168) featuring crispy cordyceps flower and fresh mango!

3. Yan
For something different but just as indulgent, Yan’s Abalone and Salmon Yu Sheng ‘Shun De’ Style (from S$98) features a mountain of fried crispy vermicelli with shredded yellow and purple sweet potatoes, pickled ginger and edible gold flakes. At the bottom is sliced cucumbers, sesame seeds and bell peppers, and the impressive food art is then crowned with yummy slices of salmon and braised abalone for a year of prosperity.

4. Greenwood Fish Market
Want to create your own yu sheng platter? You can do that with Greenwood Fish Market’s Salmon Yu Sheng (S$98) which includes 200g of salmon sashimi. 5. Keyaki
Chef Shinichi Nakatake adds a Japanese twist to the Chinese prosperity salad. Savour the Premium Yu Sheng (S$318) teeming with lobster, ikura and uni infused with sake and adorned with delicate Kinpaku Gold Flakes. Or go for the exquisite Wafu Yu Sheng (S$88 or S$138), brimming with expertly sliced sashimi such as maguro, hamachi and yellowtail, and paired with kurage jellyfish and shredded pumpkin.

6. Neo Garden
Neo Garden has not just one, or two, but more than 15 variations of yusheng! Highlights include the Golden Tiger Yu Sheng (S$168) shaped in the animal of the year. There's also the Opulence Teochew Yu Sheng (S$98) which comes with tang oh (chrysanthemum greens) and starfruit. There’s even a Nonya version (S$88) with yam, apricot, cranberry and pomelo!

7. Wan Hao Chinese Restaurant
Go all out this Lunar New Year with Wan Hao’s ultra-lavish yusheng platter, which boasts of lobster, swordfish, Hokkaido scallop, sea urchin, caviar and salmon roe alongside shredded carrot, white radish and pickled ginger. It also comes with crispy fish skin and you can choose between an option of either the traditional plum sauce or the restaurant’s new kumquat pineapple dressing.

8. Italian “Yu Sheng”
After its popularity last year, Basilico is bringing back the Italian “Yu Sheng” ($138), luxurious ingredients that include angel hair pasta, smoked salmon, baby scallops, porcini mushrooms, black truffles and caviar come together in this novel take on the traditional prosperity toss. Prized olive oil, aged balsamic vinegar and sashimi-grade tuna loin complete the decadent dish.
