The chwee kueh here is firmer and pastier than usual, which provides some heft for the savoury chye po. It's fried with dried shrimp to impart a nice umami, and not too sweet or salty. If you find chwee kueh to be too oily, you'll be glad to know that oil is drained here before serving it so it isn't greasy at all. The combination of things makes a pretty solid plate of chwee kueh.
