While Western food about adding and layering flavours, Sushi Kou believes that sushi is about subtracting and simplifying so that customers can enjoy the deep and complex flavour of Edo-style Sushi in its most natural state. The kitchen is helmed by chef Yoshio Sakuta, who's the only head chef of a Sushi restaurant to receive Two Michelin Stars in Singapore.
