Zheng Yi Hainanese Beef Noodles

This go-to stall serves a delicious rendition of beef noodles, thanks to its thick and gloopy gravy that’s infused with beef stock, herbs, and spices, giving it an addictive, meaty and sweet-savoury herbal flavour. The thick beef slices have a succulent chew, the beef balls are slightly springy, and the beef tripe is spongy. The gravy clings well to the slippery thick bee hoon while crunchy peanuts, juicy pickled mustard greens and chilli complete this dish.
