Nantsuttei
Nantsuttei’s Dragon Ramen ($15++) might not look like the typical red volcano ramen. But we assure you that it is a fearsome foe despite its appearance! It features the same tonkotsu broth as their signature ramen, which is made from chicken and pork bones, bone marrow and lots of garlic. The bowl is then topped with a chilli sauce made from minced pork, cayenne pepper, Chinese chilli bean paste, chilli padi and sake, creating a spicy umami flavour bomb!
