Chai Chuan Tou Mutton Soup
Chai Chuan Tou's mutton soup is made Teochew-style, which is slightly peppery and herbal and lighter than its Hainanese counterpart. With more than 30 years of history, the stall is a Michelin Bib Gourmand recipient that draws in a long queue consistently. Customers can choose from a variety of parts like ribs, meatballs, tripe, tendon, and even lamb brains for the extra adventurous. Garnished with coriander and brimming with umami, the herbal soup is served with rice and a tangy chilli sauce. The stall only opens for two and a half hours, so be sure to head down early to avoid disappointment!
