A popular street food in Singapore and Malaysia, you're bound to find at least one stall selling ban jian kuih at a pasar malam. Unfortunately with the current pandemic, it might still be awhile before we can go leisurely strolling at a pasar malam. Here's a recipe that you can try at home if you're craving for some ban jian kuih, or if you're just bored and looking for something new to do!
Ingredients:
- 250g flour
- 1/2 cup sugar
- 1 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp vanilla essence
- 600ml water
- Butter
- Ground peanuts – you can buy ground peanuts that come ready mixed with sugar, or pan fry your own crushed peanuts with sugar added according to your preference
- Creamy corn (Optional)
1. In a large bowl, combine flour, sugar, salt, baking soda, baking powder, vanilla essence and water. Mix until it becomes a smooth batter.
2. Using a non-stick pan over low heat, melt some butter and then add some batter into the pan. Swirl the batter around so that it becomes a thin layer.
3. Cook until it becomes dry and turns slightly brown, then release any air bubbles by poking them with a fork.
4. Coat the top with some butter and then sprinkle ground peanuts with sugar and creamy corn (optional). Carefully fold it in half.
5. Remove from pan, serve and enjoy!
