Meadesmoore
Modern steakhouse Meadesmoore does yusheng in their own style: by swapping out fish for beef! Inspired by the Japanese volcano beef donburi, the Abundance ‘niu sheng’ (from $78++) features a mound of charcoal-grilled wagyu tri-tip MS-6/7 from Queensland, surrounded by shredded vegetables and house-made pickles to add a zesty lift. The ikura, which is marinated in white wine and lemon peel, also replaces the usual raw fish. And instead of crackers, crunchy Japanese rice puffs are scattered over the dish, and a tangy ume and caramelised shallot dressing ties the “niu sheng” together. Available for both dine-in and takeaway!
