Melding together a glorious hodgepodge of condiments such as pork lard, soy, sesame oil and a piquant chilli sauce – the fragrance from this modest plate of noodles is simply heavenly. It’s no wonder they’re Michelin-approved! The stall is only open for four hours at night and wait times can go up to an hour, though loyal fans will tell you that it is well worth the wait. Springy noodles are paired with slices of char siew, braised mushrooms, chicken shreds and vegetables, and the taste is not something you’ll find anywhere else.
